Gluten Free Peanut Butter Banana Bread

1/4 cup almond butter

1/4 cup smooth peanut butter

1/4 teaspoon vanilla extract

2 Tablespoon melted butter

1 ripe banana ( + another 1/2 banana to top before baking)

Lots of cinnamon (aka a few hefty dashes)

1/4 cup coconut sugar

3 Tablespoons gluten free all purpose flour (I used arrowhead mills)

1/4 teaspoon each of baking soda, sea salt, and red maca powder 

Walnuts to top

Directions:

Preheat oven to 350F. Mash the banana, vanilla and egg together (but still leave some chunks of banana for texture). Mix in nut butters. Add all of the dry ingredients. To finish, add in the 2 Tablespoons of melted organic butter. Grease an 8 x 4 loaf pan and add in the batter. Top with sliced 1/2 banana and for a crunch, why not add some walnuts. Bake for 20min or until a toothpick comes out clean.
