Garlic Cashew Cream sauce with Zucchini Noodles

Soak cashews for 2 hours in a bowl with water at room temp.

Garlic Cashew Cream Sauce

  • 2 Cups Raw Organic Cashews (Soaked for 2 hours and rinsed)
  • 1/2 Cup Stock of your choice
  • 3/4 Cup Water
  • 1 tsp Pink Himalayan Salt
  • 2 Garlic Cloves
Zucchini Noodles
  • 4-6 Small/Medium Zucchinis rinsed for spiralizing


In a Vitamix blender, or food processor, puree until it turns into a smooth consistency. Top on virtually anything, but in this case: Zucchini noodles!

Use your spiralizer to make your zucchini noodles. Once prepped, you can eat raw with the cashew cream sauce or cook the "zoodles" first.
